Sweet Raw Mango Chutney (Methamba) (Jam)

This is the season of Mangoes.. The King of fruits.
Mangoes are widely used in Indian Cuisine.
In Maharashtra, a spicy, sweet and sour semi-solid side-dish called meth-amba is made from unripe mango slices, jaggery and fenugreek seeds. They can be served with poories and polies, like jam.
This is one of my favorite recipe using 'Raw Mango'.  This recipe has tangy and sweet taste. That's the reason this dish is kids favorite. 
So learn how to prepare Raw Mango Chutney (Jam).. 



Ingredients:

2 raw mangoes peeled and sliced
1-1/2 cup jaggery
1 tea spoon fenugreek seeds
1 tea spoon mustard seeds 
pinch of salt
pinch of asafoetida (Hing)
1 tea spoon turmeric powder
1 tea spoon chili powder
1 tablespoon oil

Method
  1. In a pan, heat oil,add mustard seeds and fenugreek seeds.
  2. When  mustard  seeds and fenugreek seed splutter add asafoetida and  raw mango.
  3. Cook for a while till the mangoes become soft and tender.
  4. Add turmeric,chili powder and pinch of salt.
  5. Mix well and cook it for a minute.
  6. Add jaggery and mix well.
  7. Cook it for a 1/2 minute
  8. Allow to cool, then chill and serve.
Serve this with poories,chapati or with bread like jam. Enjoy.. :-)

Date & Walnut Cake

A simple date and walnut cake that testes great and easy to prepare.
It is deliciously rich and wonderful with morning tea or coffee. It has healthy benefits too.
Dates and Walnut both are excellent for health. 
This Cake is easy to make and has a lovely moist texture. 
So,let's start to prepare healthy cake!!


Ingredients:
140 gr. all purpose flour
1/2 cup Walnut
1/2 cup Dates(seedless)
1 teaspoon baking powder
1/2 baking soda
200 gr. Milkmaid
75 ml. soda water
1 teaspoon vanilla extract

Method:

  1. First preheat oven to 180 deg C
  2. Soak the dates in a bowl of 100ml boiling water while you get the cake ready.
  3. Sift together dry ingredients All purpose flour, baking powder, baking soda in a bowl.
  4. Add soda water and milkmaid into the dry mixture.
  5. Mix well and add dates and walnut.
  6. Add vanilla extract.
  7. Spoon the mixture into a 20cm square -cake mold lined with non stick baking  paper or lightly greased mold . Bake it for 35- 40 minutes or until center is just set.
  8. Cool in mold, then turn out and cut into square pieces to serve.

Kande Pohe

Kande Pohe (Maharashtrian  breakfast)
The name Kande(in Marathi) means Onions in English.
Pohe means Flattened rice.

Kande Pohe is very popular Maharashtrian recipe. It is very tasty,easy to make and delicious. It is popular breakfast in Maharashtra, and can be prepared at any time and you can serve this as a snack too. Actually 'kande pohe' has also some traditional symbol. In Maharashtra, this dish is generally served during marriage talks.When a boy goes with his family to girl's house for marriage talks,this recipe is generally served.  The reason behind this is that, this recipe is easy to make and tasty. In a very less time you can prepare a very delicious recipe.
So enjoy 'Kande Pohe' with cup of tea.
Ingredients
2 cups thick Pohe (flattened rice)
2 onions
1 Potato(Chopped)
1 tablespoon oil
1 tea spoon mustard seeds
1 tea spoon turmeric powder
4-5 green chillies
4-5 curry leaves
1-2 tea spoon lemon juice
2 table spoon fresh coriander leaves (Chopped) 
Grated  coconut
Salt to taste
Pinch of sugar

Method:
  1. Wash pohe(flattened rice) and drain water completely and leave aside for 5 minutes.
  2. Add salt and sugar and mix pohe lightly.
  3. In a pan, heat oil,add mustard seeds and when they slutter add curry leaves.
  4. Add chopped onions and potato. Saute for a minute.
  5. Add green chillies, turmeric powder and mix well.
  6. Saute for 2 minutes and add Pohe.
  7. Mix and cook till pohe is heated through.
  8. Add lemon juice and mix well.
  9. Garnish with coriander leaves and grated coconut and serve hot.
Your Kande Pohe is ready to eat. Enjoy this recipe with cup of tea.
