Orange Cake

If you love oranges and you love cakes, this orange cake is a must-try!A delicious orange cake with a small hint of orange - this goes well with coffee, tea or just on its own.
A very juicy orange cake with gorgeous citrus flavour. Try this easy and impressive orange cake recipe.


Ingredients:

Butter 1 cup
Castor sugar 1 cup
Eggs 3
Baking Powder 1 tsp
Self rising flour 1 cup
Orange Zest of 1 orange
Orange essence
Chopped orange 1/2 cup

Method:

  1. Preheat the oven in 180°C .
  2. Combine butter and sugar and mix well.
  3. Add egg one by one and beat well
  4. Add orange zest and orange pieces and mix well.
  5. Add self rising flour and baking powder and mix well.
  6. Pour batter into a greased baking tin. 
  7. Bake in a pre-heated oven at  180°C for 20-25 minutes.

    Your orange cake is ready to serve.

Carrot Halwa (Gajar Halwa)

Ever wondered what  sweet makes people salivate.  It's the one and only Gajar kaa Halwa. A traditional Indian sweet prepared from grated carrots and lots of sugar and milk. It's one of the hottest selling Indian sweet. So check out the recipe below and satisfy your sweet tooth.


Ingredients:

  1.  Carrots                                           8-10 medium
  2.  Cashew nuts                                  5-6
  3. Almonds                                         5-6
  4. Raisins                                            10-15
  5. Pure ghee (Clarified butter)       3 tablespoons
  6. Milk                                                2 cups
  7. Green cardamom powder           1/4 teaspoon
  8. Mawa (khoya)                              1 cup
  9. Sugar                                             3/4 cup

Method:

  1. Peel, wash and grate carrots.
  2. In a thick bottom pan add grated carrots and milk.
  3. Cook on medium heat for five to six minutes or until the milk evaporates and the carrots are cooked.
  4. Stir in the grated khoya and sugar and cook for two to three minutes or till the sugar melts and mixes well, stirring continuously. Continue to cook for two minutes more.
  5. Add ghee and  Green cardamom powder  and mix well.
  6. Garnish with chopped cashewnuts, sliced almonds and raisins.
Gajar Halwa is ready to serve.Serve hot or at room temperature.

Chocolate Sponge Cake

If you are a chocolate lover, you're gonna LOVE this!!
This is an extremely moist cake.If you love Chocolate, If you love Cake, if you love a sweet, you will love this!Simple to make.
You'll have a delicious dessert in no time!


Ingredients:

6 Eggs
150 gr. powdered sugar
150 gr. all purpose flour
200 gr cocoa powder
1/2 teaspoon baking powder
1 tea spoon vanilla essence


Method:
  1. Beat eggs and vanilla essence together.
  2. Add powdered sugar into egg mixture and beat the mixture again until stiff peaks form. 
  3. Add all purpose flour, cocoa powder, baking powder and mix well.
  4. Pour the batter into a greased pan. 
  5. Bake for about half an hour in a per-heated 150 degree Celsius oven, until a toothpick inserted in the center comes out neat. 

    Your chocolate sponge cake is ready to serve.

Punjabi Chole Bhature

Think of Chole-Bhature and your mouth starts watering. The universal favorite is "Chole Bhature" which is a round-the-year item and is available at every way side dhaba.
Must try dish if you visit 'Delhi'. It is one of Delhi’s many Punjabi specialties. It is a heavy breakfast which is generally accompanied with 'Lassi'. So here is my recipe for Punjabi chhole bhature, guaranteed to bring the flavours of Delhi streets right into your home.



Ingredients for chole:
1 Cup Chick peas (Kabuli Chana) (soaked overnight)
1 tea bag or tsp tea leaves
2 medium sized onion
2 green chilies
1 tablespoon oil
1 tsp ginger paste
1 tsp garlic paste
4-5 cardamom
2 cinnamon
4-5 cloves
Puree of 3-4 Tomatoes
Chole masala
Red chili powder
Cumin seeds powder
Coriander powder
Amchur powder

Method for chole:
  1. Pressure cook the chick peas with the tea bag for 3 whistles until they are soft . Drain and keep aside.
  2. Heat the oil in a pan, add the cumin seeds. When the seeds crackle, add the onion, ginger-garlic paste, green chilies, cinnamon, cardamom, cloves and saute till the onion is golden brown.
  3. Add tomato puree, saute it and cook it for a 1-2 minutes.
  4. Add the chole masala, chilli powder, amchur, turmeric powder, coriander powder, cumin seeds powder and salt and saute for another minute.
  5. Add the chick peas and 1 cup of water and mix well.
  6. Simmer for 10 to 15 minutes. 
Ingredients for Bhature:

1/2 cup plain flour (maida)

1/2 cup potatoes, boiled and grated
1 1/2 tsp oil
salt to taste
oil for deep-frying


 


Method for Bhature:
  1. Combine the flour, potato, 1½ teaspoons of oil and salt and knead into a firm dough without using any water. 
  2.  Knead the dough very well till it is smoothCover with a wet muslin cloth and rest the dough for 10 minutes.
  3. Divide the dough into 4 equal parts and roll out into circles of 125 mm. (5") diameter. 
  4. Deep fry in hot oil till the bhaturas puff up and both sides are golden brown.  
  5. Serve hot with the chole, sliced onion and lemon wedges.
      
Your Punjabi Chole Bhature is ready to serve.It is a heavy breakfast which is generally accompanied with lassi. Chole bhature are served with onions and achaar.

Narali Bhat ( Sweet Coconut Rice)

Narali bhat prepared widely in Maharashtra on the day of Shravani Poornima (Coconut festival which falls on Full moon day in the rainy season, mostly in august.
Naral means Coconut and Bhat means rice in Marathi.  Tastes simply great.
So just try this sweet and tasty coconut rice.

Ingredients:
2 cups of rice
3 cups of grated jaggery
1 tsp Cardamom Powder
4 tablespoon ghee
1 coconut grated
4-5 cloves

Method:
  1. Wash and soak rice for 30 minutes.
  2. Mix coconut and jaggery and keep it aside.
  3. In a pan add ghee, cloves,soaked rice and boiled water.
  4. Cook till rice is cooked.
  5. Heat 2 tablespoons of ghee in a pan and add coconut , jaggery with boiled rice and mix gently.
  6. Cover and cook on low flame for 15 minutes.
  7. Open cover after few minutes.
  8. Add cardamom powder and mix well.
Your Narali bhat is ready to serve. Serve hot with ghee.

Italian Recipe: Spaghetti puttanesca


Spaghetti puttanesca  is a spicy, tangy, somewhat salty Italian pasta dish.  The ingredients are typical of Southern Italian cuisine: tomatoes, olive oil, olives, chili pepper, capers, garlic.

Ingredients:
400 gr spaghetti
400 gr peeled tomatoes or tomato puree
2 tablespoon parsley
8 filler anchovy
100 gr pitted olives or gaeta olives
4-5 tablespoon of extra virgin olive oil
1 tablespoon of capers in salt 
2 cloves of garlic
1 fresh chili or powdered chili pepper
Method
  1. Cook the spaghetti in salted boiling water and drain the cooked spaghetti.
  2.  Heat extra virgin olive oil and fry chili and garlic. Stir well on a low flame.
  3. Add capers and olives and stir for few minutes.
  4. Add tomato puree and continue cooking for 4-5 minutes, until you have lovely tomato sauce consistency.
  5. Add parsley leaves.
  6. Add drain spaghetti into it and stir well.
Your Spaghetti puttanesca is ready to serve. Serve hot with more olives and parsely leaves.

Coconut Cake

The cake is tender, creamy and moist. Perfect for tea time.
It's a spongy cake and delicious one. Has a good taste of milk,cream and coconut..Yummy... :-)
Really a quick dessert and can serve with fruits and whipped cream.
So just try it..
Ingredients:
1 Cup Cream
1 Cup superfine sugar
1/2 teaspoon Baking Soda
2 Cup all purpose flour
1/4 tea spoon baking powder
1 cup dessicated Coconut
1 cup milk powder or 1/2 cup milk powder
Milk – as required, to adjust batter to dropping consistency max 75 ml
1/2 cup Custard Powder
Vanilla essence
 Method:
 Preheat oven to 180 degree Celsius.
  1. Mix all purpose flour,Custard powder, milk powder, baking powder and baking soda together.
  2. Add cream,sugar,vanilla essence and milk.
  3. Beat cream mixture well till  blended smoothly.
  4. Then add flour and coconut into the cream mixture.
  5. Again beat well till blended smoothly.
  6. Add adequate milk to achieve a batter of dropping consistency.
  7. Pour the batter into a greased baking pan.
  8. Add some Choco Chips into it.
  9. Bake it for about 45-50 minutes or till done.  
Your delicious Coconut Cake is ready to serve.
