Orange Cake

Ingredients:

Butter 1 cup
Castor sugar 1 cup
Eggs 3
Baking Powder 1 tsp
Self rising flour 1 cup
Orange Zest of 1 orange
Orange essence
Chopped orange 1/2 cup

Method:

  1. Preheat the oven in 180°C .
  2. Combine butter and sugar and mix well.
  3. Add egg one by one and beat well
  4. Add orange zest and orange pieces and mix well.
  5. Add self rising flour and baking powder and mix well.
  6. Pour batter into a greased baking tin. 
  7. Bake in a pre-heated oven at  180°C for 20-25 minutes.

    Your orange cake is ready to serve.

Carrot Halwa (Gajar Halwa)

Ever wondered what  sweet makes people salivate.  It's the one and only Gajar kaa Halwa. A traditional Indian sweet prepared from grated carrots and lots of sugar and milk. It's one of the hottest selling Indian sweet. So check out the recipe below and satisfy your sweet tooth.


Ingredients:

  1.  Carrots                                           8-10 medium
  2.  Cashew nuts                                  5-6
  3. Almonds                                         5-6
  4. Raisins                                            10-15
  5. Pure ghee (Clarified butter)       3 tablespoons
  6. Milk                                                2 cups
  7. Green cardamom powder           1/4 teaspoon
  8. Mawa (khoya)                              1 cup
  9. Sugar                                             3/4 cup

Method:

  1. Peel, wash and grate carrots.
  2. In a thick bottom pan add grated carrots and milk.
  3. Cook on medium heat for five to six minutes or until the milk evaporates and the carrots are cooked.
  4. Stir in the grated khoya and sugar and cook for two to three minutes or till the sugar melts and mixes well, stirring continuously. Continue to cook for two minutes more.
  5. Add ghee and  Green cardamom powder  and mix well.
  6. Garnish with chopped cashewnuts, sliced almonds and raisins.
Gajar Halwa is ready to serve.Serve hot or at room temperature.

Chocolate Sponge Cake

If you are a chocolate lover, you're gonna LOVE this!!
This is an extremely moist cake.If you love Chocolate, If you love Cake, if you love a sweet, you will love this!Simple to make.
You'll have a delicious dessert in no time!


Ingredients:

6 Eggs
150 gr. powdered sugar
150 gr. all purpose flour
200 gr cocoa powder
1/2 teaspoon baking powder
1 tea spoon vanilla essence


Method:
  1. Beat eggs and vanilla essence together.
  2. Add powdered sugar into egg mixture and beat the mixture again until stiff peaks form. 
  3. Add all purpose flour, cocoa powder, baking powder and mix well.
  4. Pour the batter into a greased pan. 
  5. Bake for about half an hour in a per-heated 150 degree Celsius oven, until a toothpick inserted in the center comes out neat. 

    Your chocolate sponge cake is ready to serve.

Punjabi Chole Bhature

Think of Chole-Bhature and your mouth starts watering. The universal favorite is "Chole Bhature" which is a round-the-year item and is available at every way side dhaba.
Must try dish if you visit 'Delhi'. It is one of Delhi’s many Punjabi specialties. It is a heavy breakfast which is generally accompanied with 'Lassi'. So here is my recipe for Punjabi chhole bhature, guaranteed to bring the flavours of Delhi streets right into your home.



Ingredients for chole:
1 Cup Chick peas (Kabuli Chana) (soaked overnight)
1 tea bag or tsp tea leaves
2 medium sized onion
2 green chilies
1 tablespoon oil
1 tsp ginger paste
1 tsp garlic paste
4-5 cardamom
2 cinnamon
4-5 cloves
Puree of 3-4 Tomatoes
Chole masala
Red chili powder
Cumin seeds powder
Coriander powder
Amchur powder

Method for chole:
  1. Pressure cook the chick peas with the tea bag for 3 whistles until they are soft . Drain and keep aside.
  2. Heat the oil in a pan, add the cumin seeds. When the seeds crackle, add the onion, ginger-garlic paste, green chilies, cinnamon, cardamom, cloves and saute till the onion is golden brown.
  3. Add tomato puree, saute it and cook it for a 1-2 minutes.
  4. Add the chole masala, chilli powder, amchur, turmeric powder, coriander powder, cumin seeds powder and salt and saute for another minute.
  5. Add the chick peas and 1 cup of water and mix well.
  6. Simmer for 10 to 15 minutes. 
Ingredients for Bhature:

1/2 cup plain flour (maida)

1/2 cup potatoes, boiled and grated
1 1/2 tsp oil
salt to taste
oil for deep-frying


 


Method for Bhature:
  1. Combine the flour, potato, 1½ teaspoons of oil and salt and knead into a firm dough without using any water. 
  2.  Knead the dough very well till it is smoothCover with a wet muslin cloth and rest the dough for 10 minutes.
  3. Divide the dough into 4 equal parts and roll out into circles of 125 mm. (5") diameter. 
  4. Deep fry in hot oil till the bhaturas puff up and both sides are golden brown.  
  5. Serve hot with the chole, sliced onion and lemon wedges.
      
Your Punjabi Chole Bhature is ready to serve.It is a heavy breakfast which is generally accompanied with lassi. Chole bhature are served with onions and achaar.

Narali Bhat ( Sweet Coconut Rice)

Narali bhat prepared widely in Maharashtra on the day of Shravani Poornima (Coconut festival which falls on Full moon day in the rainy season, mostly in august.
Naral means Coconut and Bhat means rice in Marathi.  Tastes simply great.
So just try this sweet and tasty coconut rice.

Ingredients:
2 cups of rice
3 cups of grated jaggery
1 tsp Cardamom Powder
4 tablespoon ghee
1 coconut grated
4-5 cloves

Method:
  1. Wash and soak rice for 30 minutes.
  2. Mix coconut and jaggery and keep it aside.
  3. In a pan add ghee, cloves,soaked rice and boiled water.
  4. Cook till rice is cooked.
  5. Heat 2 tablespoons of ghee in a pan and add coconut , jaggery with boiled rice and mix gently.
  6. Cover and cook on low flame for 15 minutes.
  7. Open cover after few minutes.
  8. Add cardamom powder and mix well.
Your Narali bhat is ready to serve. Serve hot with ghee.

Italian Recipe: Spaghetti puttanesca


Spaghetti puttanesca  is a spicy, tangy, somewhat salty Italian pasta dish.  The ingredients are typical of Southern Italian cuisine: tomatoes, olive oil, olives, chili pepper, capers, garlic.

Ingredients:
400 gr spaghetti
400 gr peeled tomatoes or tomato puree
2 tablespoon parsley
8 filler anchovy
100 gr pitted olives or gaeta olives
4-5 tablespoon of extra virgin olive oil
1 tablespoon of capers in salt 
2 cloves of garlic
1 fresh chili or powdered chili pepper
Method
  1. Cook the spaghetti in salted boiling water and drain the cooked spaghetti.
  2.  Heat extra virgin olive oil and fry chili and garlic. Stir well on a low flame.
  3. Add capers and olives and stir for few minutes.
  4. Add tomato puree and continue cooking for 4-5 minutes, until you have lovely tomato sauce consistency.
  5. Add parsley leaves.
  6. Add drain spaghetti into it and stir well.
Your Spaghetti puttanesca is ready to serve. Serve hot with more olives and parsely leaves.

Coconut Cake

The cake is tender, creamy and moist. Perfect for tea time.
It's a spongy cake and delicious one. Has a good taste of milk,cream and coconut..Yummy... :-)
Really a quick dessert and can serve with fruits and whipped cream.
So just try it..
Ingredients:
1 Cup Cream
1 Cup superfine sugar
1/2 teaspoon Baking Soda
2 Cup all purpose flour
1/4 tea spoon baking powder
1 cup dessicated Coconut
1 cup milk powder or 1/2 cup milk powder
Milk – as required, to adjust batter to dropping consistency max 75 ml
1/2 cup Custard Powder
Vanilla essence
 Method:
 Preheat oven to 180 degree Celsius.
  1. Mix all purpose flour,Custard powder, milk powder, baking powder and baking soda together.
  2. Add cream,sugar,vanilla essence and milk.
  3. Beat cream mixture well till  blended smoothly.
  4. Then add flour and coconut into the cream mixture.
  5. Again beat well till blended smoothly.
  6. Add adequate milk to achieve a batter of dropping consistency.
  7. Pour the batter into a greased baking pan.
  8. Add some Choco Chips into it.
  9. Bake it for about 45-50 minutes or till done.  
Your delicious Coconut Cake is ready to serve.

Besan Ladoo

Ladoos are one of the most liked Indian sweets."Besan(Gram Flour) Ladoo" is the most popular and delicious recipe.
This Besan Ladoo is popular all over Maharashtra.Mostly prepare at Diwali.
So learn how to prepare "Besan Ladoo".





Ingredients:

Besan (gram flour) 4 cups
Ghee(Clarified Butter) 2 cups
Powdered Sugar 2 cups
Cardamom powder 1/2 tea spoon
Almonds 20-15 (crushed)

Method:
  1. Heat ghee(clarified butter in a pan and add cardamom powder.
  2. Add besan(gram flour) and roast on low heat till it is golden brown in color and nice aroma is given out.
  3. Transfer roasted gram flour to a bowl , add crushed almonds and  mix well.
  4. Allow the mixture to cool.
  5. Add powdered sugar and mix well.
  6. Roll into even sized ladoos.
  7. Allow it to cool and serve.
Your Besan ladoos are ready to serve.

Chirote Recipe

Surprise everyone with a special sweet after food. Its crispy dipped in a sugary syrup dripping giving a wonderful experience to your taste buds to savor. It's  a Maharashtrian specialty and its called "CHIROTE". 
So, learn how to prepare Chirote.


Ingredients:
1 cup Maida (Refined flour)
1 tablespoon Rava (Semolina)
1 tablespoon hot oil
Clarified butter
1 tablespoon rice flour
pinch of salt
2 cups sugar
1/2 cup water
Saffron strands
1 teaspoon lemon juice
oil for frying

Method for Sugar Syrup:


  • Mix water, sugar and saffron in sauce pan and boil over medium heat for 6 to 7 mts.
  • Add some lemon juice once syrup is ready.


  •  Method for Chirote:
    1. Combine maida (Refined flour), rava (Semolina), hot oil and pinch of salt and mix well.
    2. Add water, milk and start to knead to make smooth and soft dough, like chapati dough.
    3. Cover and keep it to rest for 2 hours.
    4. Divide the dough into 3 equal portions.
    5. Take ball and roll in very smooth roti (chapati), make 3 thin rotis (chapati)
    6. In a separate bowl mix rice flour and butter together and keep it aside.
    7. Take one roti, spread butter and rice flour mixture and place another layer of roti on the top of it.
    8. Again spread some butter and rice flour mixture and place third layer of roti and repeat the same process.
    9. Now roll three rotis.
    10. Divide roti roll in equal size ball am-king slight cross cut.
    11. Now Roll each piece of dough to make rectangular shape.
    12. Deep fry until golden brown.
    13. Deep this fried chirote into Sugar Syrup for 2-3 minutes.
    14. After 2-3 minutes keep it on a plate to drip some extra sugar syrup.
    15. Your Chirote is now ready to serve.

    Sweet Raw Mango Chutney (Methamba) (Jam)

    This is the season of Mangoes.. The King of fruits.
    Mangoes are widely used in Indian Cuisine.
    In Maharashtra, a spicy, sweet and sour semi-solid side-dish called meth-amba is made from unripe mango slices, jaggery and fenugreek seeds. They can be served with poories and polies, like jam.
    This is one of my favorite recipe using 'Raw Mango'.  This recipe has tangy and sweet taste. That's the reason this dish is kids favorite. 
    So learn how to prepare Raw Mango Chutney (Jam).. 



    Ingredients:

    2 raw mangoes peeled and sliced
    1-1/2 cup jaggery
    1 tea spoon fenugreek seeds
    1 tea spoon mustard seeds 
    pinch of salt
    pinch of asafoetida (Hing)
    1 tea spoon turmeric powder
    1 tea spoon chili powder
    1 tablespoon oil

    Method
    1. In a pan, heat oil,add mustard seeds and fenugreek seeds.
    2. When  mustard  seeds and fenugreek seed splutter add asafoetida and  raw mango.
    3. Cook for a while till the mangoes become soft and tender.
    4. Add turmeric,chili powder and pinch of salt.
    5. Mix well and cook it for a minute.
    6. Add jaggery and mix well.
    7. Cook it for a 1/2 minute
    8. Allow to cool, then chill and serve.
    Serve this with poories,chapati or with bread like jam. Enjoy.. :-)

    Date & Walnut Cake

    A simple date and walnut cake that testes great and easy to prepare.
    It is deliciously rich and wonderful with morning tea or coffee. It has healthy benefits too.
    Dates and Walnut both are excellent for health. 
    This Cake is easy to make and has a lovely moist texture. 
    So,let's start to prepare healthy cake!!


    Ingredients:
    140 gr. all purpose flour
    1/2 cup Walnut
    1/2 cup Dates(seedless)
    1 teaspoon baking powder
    1/2 baking soda
    200 gr. Milkmaid
    75 ml. soda water
    1 teaspoon vanilla extract

    Method:

    1. First preheat oven to 180 deg C
    2. Soak the dates in a bowl of 100ml boiling water while you get the cake ready.
    3. Sift together dry ingredients All purpose flour, baking powder, baking soda in a bowl.
    4. Add soda water and milkmaid into the dry mixture.
    5. Mix well and add dates and walnut.
    6. Add vanilla extract.
    7. Spoon the mixture into a 20cm square -cake mold lined with non stick baking  paper or lightly greased mold . Bake it for 35- 40 minutes or until center is just set.
    8. Cool in mold, then turn out and cut into square pieces to serve.

    Kande Pohe

    Kande Pohe (Maharashtrian  breakfast)
    The name Kande(in Marathi) means Onions in English.
    Pohe means Flattened rice.

    Kande Pohe is very popular Maharashtrian recipe. It is very tasty,easy to make and delicious. It is popular breakfast in Maharashtra, and can be prepared at any time and you can serve this as a snack too. Actually 'kande pohe' has also some traditional symbol. In Maharashtra, this dish is generally served during marriage talks.When a boy goes with his family to girl's house for marriage talks,this recipe is generally served.  The reason behind this is that, this recipe is easy to make and tasty. In a very less time you can prepare a very delicious recipe.
    So enjoy 'Kande Pohe' with cup of tea.
    Ingredients
    2 cups thick Pohe (flattened rice)
    2 onions
    1 Potato(Chopped)
    1 tablespoon oil
    1 tea spoon mustard seeds
    1 tea spoon turmeric powder
    4-5 green chillies
    4-5 curry leaves
    1-2 tea spoon lemon juice
    2 table spoon fresh coriander leaves (Chopped) 
    Grated  coconut
    Salt to taste
    Pinch of sugar

    Method:
    1. Wash pohe(flattened rice) and drain water completely and leave aside for 5 minutes.
    2. Add salt and sugar and mix pohe lightly.
    3. In a pan, heat oil,add mustard seeds and when they slutter add curry leaves.
    4. Add chopped onions and potato. Saute for a minute.
    5. Add green chillies, turmeric powder and mix well.
    6. Saute for 2 minutes and add Pohe.
    7. Mix and cook till pohe is heated through.
    8. Add lemon juice and mix well.
    9. Garnish with coriander leaves and grated coconut and serve hot.
    Your Kande Pohe is ready to eat. Enjoy this recipe with cup of tea.
    You can serve this recipe with Chana Masala

    Tamarind Chutney (Tamarind Ketchup)

    Tamarind(Imli) Chutney (Tamarind Ketchup)
    This tangy chutney can be used as a dip or stir-in sauce for numerous Indian snacks.
    This exotic sweet and sour chutney is a delicious condiment. This chutney can be called as ketchup also.
    A very popular chutney served with many chat dishes.
    Those who love the taste of tamarind would love this chutney.
    So let's start.. :-)

    Ingredients:
    200 gm Tamarind (Imli)
    100 gm Jaggery
    1 tea spoon Cumin seeds powder
    1/2 tea spoon black salt
    Salt to taste
    1 tea spoon Chat Masala
    1 tea spoon red chili powder

    Method:
    1. Soak the tamarind in hot water for 15-20 minutes.
    2. Remove the seeds of tamarind and make extract.
    3. In the pan,heat 1 tea spoon of oil and add cumin seeds into it. Cook till they splutter.
    4. Add 2 cups of water, tamarind water, red chili powder, cumin seeds powder, chat masala, jaggery and black salt and salt to taste. Bring to boil.
    5. The jaggery melts completely.
    6.  Simmer over low heat until the mixture turns a deep chocolaty brown and is thick enough.This should take 20 to 30 minutes. The sauce will be thin, but it will thicken upon cooling. 
    7. Bring the sauce to a boil and turn off.
    8. Allow to cool, then chill and serve.
    Your tamarind chutney is ready to serve.
    You can serve this chutney with various chat items like Batata Wada,Samosa, Kachori.

    Chana Masala

    Chana Masala
    Chana is known as Chickpea also.
    Chana Masala is most popular and delicious recipe. A well-known Punjabi recipe.
    This chana masala recipe is cooked from kala chana (Black Chickpea) or Kabuli Chana (White Chickpea).
    This chana masala recipe is simple,delicious and yummy.
    So cook Chana Masala in my simple style. :-)


    Ingredients:
    1/2 kg black chickpea (kala chana)
    1 teaspoon ginger-garlic paste
    1 teaspoon coriander powder
    1 tablespoon grated coconut
    1 teaspoon cumin seeds
    4-5 cloves
    1 piece cinnamon
    2-3 cardamom
    2 big size onion
    2 big size tomato
    1 teaspoon Garam Masala
    1 teaspoon red chili powder
    1 teaspoon turmeric powder
    1 tablespoon oil
    salt to taste

    Method:
    1. Soak Black Chickpea(kala chana) in water for overnight and boil chickpeas in pressure cooker.
    2. Drain chickpeas and keep aside.
    3. Grind cloves,cinnamon and cardamom.
    4. In a pan, heat oil and add chopped onion into it,stir well.
    5. Once the onion gets soft,add chopped tomato into it.
    6. Stir this mixture for 1 min.
    7. Remove from the fire and cool for sometime.
    8. Then grind onion and tomato mixture into fine paste.
    9. In the same pan,heat 1 tablespoon of oil and add cumin seeds into it. Cook till they splutter.
    10. Add Onion and Tomato paste.
    11.  Add ginger-garlic paste.
    12. Add cloves,cinnamon and cardamom powder.
    13. Add Garam masala, red chili powder, turmeric powder,coriander powder and mix well.
    14. Add salt to taste.
    15. Add black chickpeas(kala chana) and 1 cup water. MIx well.
    16. Add grated coconut
    17. Cook it for 5-10 minute.
    18. Turn off the fir and garnish with coriander leaves and lemon.
    Your chana masala is ready to serve.
    Serve hot. You can serve this chana masala with Chapati(Indian Bread) or Batata Wada.

    Paneer Methi Chaman

    Paneer (Cottage cheese) methi (Fenugreek) chaman..


    Fenugreek leaves and seeds are nature’s gift to mankind. This wonder herb is rich in minerals like Potassium, Calcium, and Iron. The leaves have good dietary fiber and are abundant in Vitamin C and Vitamin K.

    Fenugreek  is available and used both as a herb (the leaves of the plant) and as spice (the seed). It is cultivated worldwide as a semi-arid crop. It is frequently used in curry and is a very famous Indian leafy vegetable which resembles clover leaves. It has a very light bitter taste (which might require getting used to) and has a spicy taste to it. 

    Fenugreek leaves add flavor and zest to your cooking and you can add fenugreek leaves to any kind of cooking that involves dal, vegetable, rice, or atta (chapathi flour). Ensure that the leaves are washed well before cooking.

    Fenugreek seeds and the leaves have a strong aroma.
    Loads of greens are combined with paneer and punjabi spices to form this brilliant creation. So,I would love to present you this Gorgeous, Delicious and Yummy Delicious Paneer Methi Chaman.


    Ingredients:
    3 cups Fenugreek leaves(Methi leaves)
    2 cups Spinach leaves (Palak Leaves)
    1 cup fresh cream
    2 tablespoon oil
    1 tea spoon cumin seeds
    2 tablespoon onion paste
    1 tea spoon turmeric powder
    1 tea spoon chili powder
    3-4 green chillies paste
    1 teasppon ginger paste
    1 teaspoon garlic paste
    2 pieces of cinnamon
    1 cup Paneer (Cottage Cheese)- cut into cubes
    1 tea spoon coriander powder
    1 teaspoon cumin seeds powder
    Salt to taste




    Method:
    1. Blanch fenugreek leaves and spinach leaves in vessel of boiling water for 5-7 minutes.
    2. Drain and blend in a mixer till smooth. Keep aside.
    3. Heat the oil in a pan, add cumin seeds, cinnamon, ginger-garlic paste, green chillies paste and onion paste.
    4. Saute the mixture for 1 minute. Then add turmeric powder, chili powder, cumin seeds powder, coriander powder and mix it well.
    5. Add spinach and fenugreek paste into it and saute it for about 2 minutes.
    6. Add paneer cubes, salt and cook on a medium flame for 2-3 minutes..
    7. Add some fresh cream into it.
    Your paneer Methi Chaman is ready to serve.
    I served this with more fresh cream on the top of it.
    Serve this with chapati (Indian Bread) or rice.





     


    Batata Wada

     Batata Wada

    The name Batata(in Marathi) means Potato in English.
    Batata wada is popular Indian fast food in Maharashtra,India.
    Batata wada has gained a place in heart of Indians all over the country.
    Spiced mashed potatoes are dipped in chickpea batter, deep fried to a golden shade... It's yummy..
    This is one of my all time favorite.

    So, let's start.

    Ingredients:
    1/2 kg Potato
    1 tea spoon red chili powder
    1 tea spoon mustard seeds
    1 tea spoon turmeric powder
    10-15 cloves of garlic
    1 Inch ginger
    7-8 green chillies
    7-8 curry leaves(kadi patta)
    Juice of 1 lemon
    salt to taste
    Sugar to taste
    1 cup Bengal gram(Chickpea) flour (Besan)
    2 table spoon oil
    1/2 teaspoon chili powder
    1/2 tea spoon turmeric powder
    Water as required
    salt to taste


    Method :
    1. Boil and peel potatoes and roughly mash them.
    2. Grind ginger, garlic cloves, green chillies and add this mixture into mashed potatoes.
    3. Add lemon juice,sugar and salt into potato mixture.
    4. Heat oil in a pan and add mustrad seeds. Once it starts popping, add curry leaves,asfoetida,turmeric powder.
    5. Pour this oil mixture into mashed potato and mix well.
    6. Shape the potato mixture into small balls and keep it aside.
    7. Add some salt, turmeric powder and chili powder to the bengal gram flour. Add water gradually and keep mixing with a spoon or wire whisk. Remove lumps if any. The batter should not be too watery or too thick. If lifted by a spatula, it should flow in a ribbon like consistency.
    8. Add 2 tablespoon hot oil into batter.
    9. Heat some oil in a pan. To check if oil is heated enough, drop some batter in the oil. If the batter immediately floats on the surface of the oil, the oil is ready. Also make sure that the oil is not too hot. Else, the wadas turn dark from the outside before they are actually done from the inside.
    10. Now dip each ball in the batter, letting the excess batter drip off and slowly add to the hot oil. At a time you can fry 4-5 wadas. Do not overcrowd the pan. Like this, fry all the wadas until golden. Remove on a paper towel and drain. Batata Wadas are ready.
    Serve hot with Tamarind Chutney/ buttermilk /Chana masala.

    Paneer Butter Masala (Dhaba Style)

    Paneer(Cottage Cheese) Butter Masala...
    One of the most popular main course food item in Indian restaurant and specialty of Punjabi Dhaba.
           Paneer Butter Masala is a delicious punjabi dish and quite popular in Indian Restaurant. Paneer cooked in a aromatic tomato,butter and onion sauce.

    It is pretty easy to get restaurant look and taste with this simple recipe.
          So without wasting lots of your time and allow you to waste your energy anymore, I would love to present you this Gorgeous, Delicious and Yummy Delicious Paneer Butter Masala.


     Ingredients:

    200 gm Paneer (Cottage Cheese) - Cut into Cubes.
    2 tablespoon Butter
    4 onion (Medium,Chopped)
    2 Tomato (Medium,Chopped)
    3-4 green chillies
    1 teaspoon ginger paste
    4-5 cloves of garlic
    4 Cloves
    2 pieces of Cinnamon
    1 teaspoon turmeric powder
    2 teaspoon red chilly powder
    1 teaspoon Garam Masala Powder
    1 tea spoon Cumin seeds powder
    1 teaspoon Coriander powder
    2 tablespoon oil
    Salt to taste

    Method:

    1. First grind ginger garlic and green chillies together.
    2. Mix this mixture with chopped onion,Cinnamon and cloves.
    3. In a pan, heat 1 tablespoon of oil.
    4. Add chopped onion,ginger-garlic-green chilly paste,cinnamon and cloves together and stir well.
    5. Once the onion gets soft,add chopped tomato into it.
    6. Stir this mixture for 1 min.
    7. Remove from the fire and cool for sometime.
    8. Then grind onion and tomato mixture into fine paste.
    9. In the same pan,heat 1 tablespoon of oil.
    10. Add the onion and tomato paste into it.
    11. Then add turmeric powder,Chilli powder,cumin seeds powder,coriander powder and Garam masala.
    12. Cook for 10-15 min.
    13. Add some water and bring to boil.
    14. Then add some paneer cubes, butter and salt to taste.
    15. Mix well and cook for 5-10 min.
    16. Remove form heat.
    17. Garnish with coriander.
             Your Paneer Butter Masala is ready to serve. Serve this with Chapati(Indian Bread) or Paratha or Rice.

    Note: To get nice red colour to Paneer butter masala use Kashmiri Red Chilli Powder.

    Mint Rice (Pudina Rice)

    Mint Rice(Pudina Rice)..

    Fresh mint is the perfect ingredient for a great summer meal. The smell, taste–everything about mint makes me happy. A great way to enjoy this herb fresh, with rice. Light, aromatic and immensely flavorful rice dish which gives a nice light green color and aromatic flavor to your rice.
       Mint is a good appetizer and promotes digestion, due to its typical aroma. So,serve this aromatic meal to your family and friends.. :-)


    Ingredients:

    1-1/2 cup Mint Leaves(Pudina Leaves)
    2 cups Rice( I used Basmati Rice)
    4 cups Water
    2-3 cloves
    1 tea spoon ginger paste
    3-4 cloves garlic
    2-3 green chillies
    1/2 cup Green peas
    1 finely chopped onion
    1 Bay leaf
    1 piece Cinnamon
    1 table spoon Oil or Butter
    1 Teaspoon Cumin seeds
    Salt to Taste
    1 teaspoon Black Pepper Powder

    Method:

    1. Grind Mint leaves with garlic and green chillies.
    2. Add oil (or butter) saute the cumin, bay leaf,Cinnamon, cloves and ginger paste.
    3. Add chopped onion and saute it.
    4. Once the onions get soft, add mint,garlic and green chilly paste
    5. Saute it for 1-2 min.
    6. Add the rice and saute until rice is translucent.
    7. Add 4 Cups of water and green peas.
    8. Add some salt to taste, black pepper powder and stir well.
    9. Cover and cook for 8-10 min or until the rice is cooked.
    10. Fluff up the rice and serve hot.
    I served these garnished with few more mint(pudina) leaves and fried cashews.

    Cream Cake

    Cream cake is creamy, rich and it's egg less.
    It's a spongy cake and delicious one. Has a good taste of milk and cream..Yummy... :-)
    Just try it. :-)


    Ingredients:
    1 Cup Cream
    1 Cup superfine sugar
    1/2 teaspoon Baking Soda
    2 Cup all purpose flour
    1/4 tea spoon baking powder
    1 cup milk powder or 1/2 cup milk powder
    Milk – as required, to adjust batter to dropping consistency max 75 ml
    1/2 cup Custard Powder
    Vanilla essence

     Method:
     Preheat oven to 180 degree Celsius.
    1. Mix all purpose flour,Custard powder, milk powder, baking powder and baking soda together.
    2. Add cream,sugar,vanilla essence and milk.
    3. Beat cream mixture well till  blended smoothly.
    4. Then add flour mixture into the cream mixture.
    5. Again beat well till blended smoothly.
    6. Add adequate milk to achieve a batter of dropping consistency.
    7. Pour the batter into a greased baking pan.
    8. Add some Choco Chips into it.
    9. Bake it for about 45-50 minutes or till done.  
    Your delicious Cream Cake is ready to serve.

    Roasted Almond Chocolate

    Everybody loves to eat chocolates. This homemade chocolate recipe can be delicious for your children, or you can gift them to someone. It is very easy to prepare and won't even take your too much time to prepare. So let start to prepare delicious chocolate.
    Ingredients:
    1 cup cooking butter
    1 cup Icing Sugar
    1 cup Cocoa Powder
    1-1/4 cup Milk Powder
    1-1/4 cup roasted Almond
    1 teaspoon vanilla essence


    Method:
    1. Mix  icing sugar,cocoa,and milk powder together.
    2. Melt Butter on a double boiler.
    3. Add Cocoa,Icing Sugar and Milk Powder Mixture in a melted butter.
    4. Stir well.
    5. Add roasted almond and vanilla essence in this mixture.
    6. Pour this mixture in a chocolate molds and deep freeze them.
    7. After 10-15 Minutes , take them out and  remove the chocolates from the molds into separate    plate.

    Your Roasted Almond Chocolates are ready to serve.

    Milk Burfi

    A Desert from India. It's fast fresh and simple. Easy to make for beginners also.
    So what are you waiting for??? Let's start an Indian delicious desert.


    Ingredients:
    1-1/2 Cups Milk Powder
    1/2 cup Superfine sugar
    1-1/2 tea spoon  Citric acid Powder
    1/2 cup milk
    Cardamom Powder
    Chopped Almonds,Pistachios

    Method:
    1. Mix milk powder,Superfine sugar,Citric acid powder.
    2. Add Milk into it until the mixture  becomes smooth.
    3. Pour this mixture in a greased plate with butter and allow it to set and cool.
    4. After 10-20 minutes cut into square or diamond shape and top them with almond and pistachios pieces.

    Your milk burfi is now ready to serve.











    Green Peas grilled Sandwich


    Simple,healthy and easy to make sandwich.  
    As a starter along with your soups,this makes a great breakfast also.
    This is an Indian tasty sandwich. You must try this.




    Ingredients:
    1 Cup Frozen peas(if using fresh boil or steam it until fresh)
    4 slices white/brown bread
    2-3 green chillies
    1/2 teaspoon of ginger
    2-3 cloves of garlic (crushed)
    1 teaspoon cumin seeds
    1 teaspoon lemon juice
    Butter
    Salt to taste

    Method:
    Stuffing:
    1. Grind green peas.
    2. Grind chillies,ginger,garlic and cumin seeds together.
    3. In a pan heat butter and add chillies,ginger-garlic and cumin seeds paste.
    4. Lower the flame and add green peas mixture.
    5. Mix well all the ingredients together.
    6.  Add salt to taste.
    7. Add lemon juice and mix well.

    Sandwich method:
    1. Butter one side of slice of bread.Place bread butter side-down.
    2. Add stuffing on to bread.
    3. Butter a second slice of bread and place butter side-up on top of sandwich.
    4.Grill until lightly browned in a sandwich maker.
    5. Repeat with remaining two slices of bread.

    And serve hot with tomato sauce or chutney.
